Capriccio of scampi from the Tyrrhenian Sea with aromatic herbs and a tomato ‘cassata’ and a mint and basil sorbet; crunchy fried scallops with saffron on crystallized pumpkin with shelled cannellini beans and balsamic oil; taglierini with cuttlefish ink and shellfish; shrimp tails and small squid in a delicate pesto of basil with grated mullet botargo; parcels of white rabbit meat with white cabbage, lightly flavoured with garlic and shavings of smoked, matured goat’s milk ricotta; loin of lamb dressed in basil with an aubergine sauce; mangetout peas in Greve lard and roulade of Savoy cabbage; slices of pigeon breast stuffed with fatty liver and pigeon giblets fried in corn meal; crème brûlée, fig tart and custard flavoured with Moscato Passito di Pantelleria, assorted confectionary cakes.
